You're "FIN"-tastic Rolls

Love is in the air and what better way to say "I love you" than making delicious rolls for your significant other! We love these small batch rolls adapted from Baking Mischief's "Small Batch Cinnamon Rolls" recipe. 

 

Ingredients:

  •  cup milk any percentage
  • 1 teaspoon active dry yeast
  • 1/2 tablespoon granulated sugar plus a pinch for proofing yeast
  • 1/2 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1 teaspoon Old Bay seasoning 
  • 2 tablespoons  salted butter melted and slightly cooled
  • 1 large egg 
  • 1 cup all-purpose flour
  • 1/4 cup beet juice

Filling

  • 1/2 tub favorite Jinka, Plant-Based Tuna
  • 1/4 cup shredded cheese

Frosting

  • 3 ounces chive and onion cream cheese, softened
  • tablespoons sugar

 

Instruction:

Savory Beet Dough

  1. Warm milk until it is lukewarm, you'll be able to put your finger into the milk without scalding it. Stir in yeast and a pinch of sugar and allow to sit for 10-15 minutes until the top of the mixture looks foamy.*
  2. In a medium bowl, whisk together milk and yeast mixture with melted butter, sugar, egg, black pepper, beet juice, Old Bay seasoning, and salt.
  3. Add the flour and mix until combined. Knead the dough on a well-floured work surface until the dough is no longer sticky and forms a ball (about 10 to 15 folds).
  4. Place dough into a greased bowl, cover with a towel, and allow to rise in a warm place for an hour to 90 minutes, until doubled in size.

Shape Rolls

  1. Once your dough has risen, turn it out on a lightly floured surface and roll into a rectangle. 
  2. Spread Jinka and cheese over the rolled out dough.
  3. Roll into a tight log and cut into four pieces. **Use a serrated knife or dental floss to cut the roll into quarters.

Same-day Rolls

  1. Place the rolls in a 6 to 7-inch greased baking dish. Cover with a towel, place them in a warm spot, and allow to rise for 45 minutes to an hour, until puffed up and fluffy.
  2. Preheat oven to 375° F. Bake rolls for 15-22 minutes, until the tops are golden and centers cooked through. Allow rolls to cool for 5 minutes before frosting.

Frosting

  1. While your rolls are baking, in a medium bowl, whisk together softened cream cheese and sugar.
  2. Spread frosting over rolls and serve!
